Simple Nutritious Vegan Salad

Don’t run away!  Don’t let the title scare you.  This salad will fill you up, leaving you satisfied and energized.

Here’s the deal
Ingredients:
1 medium haas avocado
fresh juice of one lemon
fresh juice of 1 orange
6 cups mixed dark greens (mixed baby greens, arugula, spinach, kale, etc.)
1 cup cooked quinoa (chilled or at room temperature)

Instructions:
1.)  In a large bowl, mix together the avocado, lemon juice, and orange juice.  With a fork, mash and mix until combined and slightly chunky (I also used my immersion blender)
2.)  Add the mixed greens.  Using your clean/gloved hands, massage and mix the avocado dressing into the greens.  Wash your hands.
3.)  Next, add in the cooked quinoa and stir to combine.
4.)  Serve chilled
