Mexican Vegetables

I had so much zucchini that I needed to use.  This dish was a good way to use them and enjoy a healthy dinner.  I even served it the next day with white beans mixed in as a great main dish.




2 tablespoons of grape seed oil

3  medium zucchinis
2 ripe tomatoes
1 small onion
1 can of sweet corn

1 can of fire roasted diced tomatoes

1/2 teaspoon tabasco

salt and pepper to taste

1 tablespoon cilantro



Dice the zucchini, tomatoes and onions. Heat a saucepan with the oil and first add the onion and fry for a bout 1 minute, then add the zucchini and the tomatoes and cover, let it cook for about 4 minutes. Then, add the sweet corn and diced tomatoes.  Check that the zucchini is well cooked, if it is, add tabasco and salt and pepper to taste.  Add the cilantro.  Serve hot and enjoy!
You can make wraps with flour tortillas
