2 Tbsp roasted pumpkin seeds, spicy flavor – or add a dash of cayenne powder to plain seeds
1 1/2 cups carrots, shredded or julienned
1 1/2 cups zucchini, shredded or julienned
2 Tbsp Extra virgin olive oil
2 Tbsp apple cider vinegar
2 tsp maple syrup
1/2 tsp lemon zest
1/2 tsp salt
Combine all ingredients and serve.
I tried this in a wrap, but I think it’d be much better served along side a dish. Please enjoy!
