Asparagus White Bean Salad

I made the following salad and then placed it over a spring mix  to enjoy for a hearty lunch.

Asparagus White Bean Salad

1 bunch of asparagus
-1 can of northern white beans
-1 cup of cherry sun globe tomatoes
-3T sunflower seeds
-3/4 cup apple cider vinegar
-2T olive oil
-1 tsp mixed freshly ground peppercorns
1 tsp dried chives
1 tsp basil
1 tsp tarragon
1 tsp parsley
1 bay leaf
1 tsp dill weed
1 tsp garlic powder
-1t garlic salt

1. Begin by steaming the asparagus in a large skillet. Fill the skillet with about 1 inch of water. Then place asparagus in the water and cover. Turn your burner to high heat and cook for about 5 minutes and then blanch.  Place in refrigerator to chill or place in an ice bath and put in the freezer until ready to combine
2. Next, dice the tomatoes into 1/2 inch chunks. Then in a large bowl, mix together tomatoes, sunflower seeds, and beans (drained and rinsed). Slice chilled asparagus into halves and toss with tomatoes and beans.

3. Finally to create your dressing, mix together apple cider vinegar, olive oil, and spices. Then toss the salad in the dressing.
