Mango Black Bean Salad

I’ve been making some changes recently and as a result you can look forward to seeing more healthy recipes as opposed to the indulgent.  Rest assured that I promise to still bring you some delicious cheats, but for now, why not take advantage of all of the delicious produce of summer?  Here is a mango black bean salad that you don’t even need dressing for!  So delicious!

Black Bean Mango Salad
Ingredients
1 mango, peeled, pitted and cubed
2 tablespoons chopped fresh cilantro
4 green onions, thinly sliced
1 medium red bell pepper, seeded and chopped
1 cup frozen corn, thawed or 2-3 ears fresh corn, husked, silks removed
3 cups cooked black beans or 2 (15 ounce) cans no-or-low salt black beans drained and rinsed
3 tablespoons fresh lime juice
1 teaspoon minced fresh garlic
1 teaspoon dried oregano
1 teaspoon ground cumin
dash chili powder
9 cups chopped romaine lettuce
Instructions
If using fresh corn on the cob, steam or boil for 3-5 minutes or until tender, drain, cool and cut kernels off
the cob, cutting close to the cob. Mix all the ingredients, except the lettuce. Allow salad to stand at least
15 minutes before serving. Serve on a bed of chopped green lettuce.
