Quick and Easy Marinara Sauce

My friend did it.  I was talking on the phone with him and he mentioned pasta.  He was speaking about making it for a girl and was asking about a bread recipe and a wine recommendation and all I could think was, ‘wow!  I’m really hungry for some good, simple pasta!!’  Unfortunately I didn’t have any of my marinara sauce made, which I cook for a quite some time on the stove.  What was I to do?  Here is what I did to solve my little First World problem…..

2 teaspoons olive oil

2 cloves garlic, run through garlic press

1/8 cup onions finely diced

1 15 oz can of diced tomatoes

1 teaspoon dried oregano

fresh basil, chiffonade

freshly ground pepper

Heat oil in a sauce pan, add garlic and saute for 30 seconds

Add onions and saute until soft

Add tomatoes, oregano, most of the basil (reserving some for garnish to add fresh flavor at the end) and salt and pepper

Cook for approximately 5 minutes and serve with your favorite pasta.

This sauce is a nice, fresh taste, which is nice to serve in the summer time. Enjoy!
