Papaya Seed Dressing

I was introduced to papaya seed dressing by a very dear friend of mine.  He has a special place in his heart for Hawaii and made this dressing with a delicious dinner.  I have included the colorful salad that I like to serve it with, though it’s excellent with the simple salad that I was first served with it:  spring mix.

A salad with papaya seed dressing

Our salad contained:

Spring mix greens

Edamame

Mandarin oranges

Red Bell pepper

Avocado

Papaya Seed Dressing

1 cup sugar

1 ½ teaspoon salt

1 tablespoon English Style dry mustard (I like to use whole grain Dijon mustard)

1 cup tarragon vinegar (apple cider vinegar will work as well)

1 cup vegetable oil

¼ cup minced onion

all the seeds from a full papaya

Run this through a blender until the seeds look like poppy seeds and everything is well blended

Note:  You can use less sugar if you like a stronger vinegar taste, which is what I like to do
