Elegant Simple Pasta

It was going to be a long night and I needed something to keep me going that wasn’t going to take long to make.  This pasta is full of good nutrients and was quick and easy to prepare.  I hope that you enjoy it as much as I did.  To me it was like comfort food without any guilt!

1 box Ezekiel Sprouted Grain Fettuccine

approximately 4 cups chopped kale – stems removed

1 can of garbanzo beans

Zest from one lemon

Juice from one lemon

Freshly ground pepper

Fresh basil, chiffonade cut

1/3 cup extra virgin olive oil

2 cloves garlic, through a garlic press

½ small onion, diced

Feta cheese

Prepare the fettuccine according to package directions.

While pasta is cooking heat 1 teaspoon of olive oil in a large skillet on medium heat

Add kale and onions, stirring until kale begins to turn bright green

Add the garbanzo beans and turn heat to lower heat, stirring occasionally

Zest and juice the lemon and combine with olive oil and garlic in a separate container

Add the garbanzo beans, kale, onions, basil, and freshly ground pepper (if serving all immediately add the oil, garlic, lemon mixture, otherwise add to individual servings) to the pasta and toss.  Divide on plates and finish with a sprinkle of feta cheese.
