Leafy Caprese Salad

This quick salad was what I came up with to accompany some pizza at another impromptu Sunday get-together at Jonathan’s.  I had rehearsal and some quality time with the cast so whatever I would bring would have to be quick and easy.  All the ingredients were at my house!

For the salad:

Baby arugula

Fresh mozzarella – larger size, cut into slices

Campari tomatoes cut into thin slices

Fresh basil

Add the arugula to the bottom of a bowl and top with mozzarella, tomatoes and basil – alternating each and then chopping some fine for the center for a nice presentation

For the dressing:

1/4 cup red wine vinegar

1/4 cup balsamic vinegar

1 and 1/2 cup extra virgin olive oil

1 teaspoon salt

1/4 teaspoon freshly ground pepper

approximately 1 tablespoon real, natural maple syrup

Combine all ingredients, shaking before using

I added maple syrup to cut some of the taste of the vinegar.  It was pretty ‘bitey’ without it.
