Mexican Chop Salad with Honey Lime Cilantro Vinaigrette Dressing

I bring this next recipe to parties and get togethers.  It’s a quick fix and is delicious!  It also goes very well with my Throw-In Mexican Chicken Soup (found here:  https://thesassystove.wordpress.com/2012/02/11/throw-in-mexican-chicken-soup/  )

This colorful salad is sure to bring some healthy spice to your fiesta!  Enjoy!

I know that you might think, ‘feta?  why not cheddar?’ trust me!  It’s fantastic!

  • 1 head chopped romaine lettuce
  • 1 can (15.5 oz) black beans, rinsed and well drained
  • 3/4 cup chopped tomato
  • 3/4 cup chopped peeled jicama
  • 3/4 cup corn kernels
  • 3/4 cup thinly sliced radishes
  • Half a ripe avocado, diced
  • 1 red bell pepper, chopped
  • 1/4 cup crumbled feta cheese

Honey-Lime Dressing

  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tbsp raw honey
  • 2 tbsp finely chopped fresh cilantro
  • 1 garlic clove, peeled and minced
  • 1/2  jalapeño pepper, diced
